National Peanut Butter Month! Fun Facts & Recipes
It’s National Peanut Butter Lovers Month! I am obsessed with peanut butter just as much as the next person. I could just eat it out of the jar with a spoon! I may even have the nickname Peanut Butter. In honor of this special month, I thought I would share some fun facts about peanut butter with you. I’ve also included a few recipes where peanut butter shines!

Did you know that peanuts are not actually nuts? They are legumes, which means they are related to beans and lentils. Peanuts grow underground, which is why they are sometimes called ground nuts.
There are two types of peanuts: runner peanuts and Spanish peanuts. Runner peanuts make up about 80% of the peanuts grown in the United States and they are larger in size. Spanish peanuts are smaller and have a reddish-brown skin.
Peanut butter was first introduced at the St. Louis World’s Fair in 1904 by C. H. Sumner. He sold his peanut butter for six cents a pound. Today, the average price for a pound of peanut butter is about $2.50.

PB&J Overnight Oats
Ingredients:
-1/2 cup rolled oats
-1/2 cup milk of choice
-1/4 cup chunky peanut butter
-1 tablespoon jelly or jam of choice
-1 teaspoon vanilla extract

-2 slices whole grain bread, lightly toasted
-2 tablespoons natural peanut butter
-1 teaspoon cinnamon
-1 teaspoon chia seeds
-1 teaspoon coconut oil
-1 banana, sliced in half lengthwise
-2 strawberries, sliced
-1 tablespoon peanuts, chopped
In a small bowl, stir together the peanut butter, cinnamon, and chia seeds. Set aside.In a small pan over medium heat, melt the coconut oil. Place bananas in pan and cook until golden brown.On one slice of bread, spread the peanut butter. Top with the cooked bananas, strawberry slices, and chopped peanuts. Place other slice of bread on top and enjoy!
